Cucumber Tomato Salad is the perfect side salad for any time of year!

It is packed with juicy ripe tomatoes, crisp cucumbers and fresh herbs and all topped off with a delicious creamy dressing for a healthy addition to your menu plan! I add in fresh herbs and once in a while a sprinkle of feta cheese!

Creamy Cucumber Tomato Salad is the perfect dish for spring and summer (in fact, I make it all year round). It is versatile, packed with deliciously healthy flavors and it lasts for several days in the fridge! I love options that I can prep in advance and enjoy all week for lunch or a quick side at dinner.

Sometimes the simplest ingredients make the best dishes, in this case ripe juicy tomatoes, crisp cucumbers, sweet white onion and fresh herbs tossed in a delicious creamy dressing. The combination of tomatoes, cucumbers and onions is classic (like in Greek pasta salad) and for good reason!
Ingredients for Creamy Cucumber Tomato Salad

The cucumber in this salad makes it very refreshing, I like to leave the skin on the cucumber for added flavor and texture. You can use any kind of tomato in this recipe, including cherry or grape. Whatever you prefer, or have on hand will work well. Because the flavors of this dish are very simple, you’ll want to choose the best tomatoes you can and if it’s summer and you happen to have garden fresh, that’s definitely a bonus!

I mentioned that this recipe is versatile; you can use the tomato of your choice, however you’ll want to use white onions (with a white papery skin).  These are different than a typical yellow onion as they have a milder flavor and are a bit sweeter.  I sometimes soak the onion slices in ice water while I’m preparing the rest of the ingredients so it has a little bit less “bite”.

Keeping in the versatile spirit of this recipe, you can use your favorite herbs in this recipe (I used parsley, dill and basil), but whichever you choose, fresh is best. There is only one ingredient that I recommend sticking to solidly, and that is the delicious Ranch dressing!

Creamy Cucumber Tomato Salad pairs well with grilled chicken for a quick dinner, or it makes for a great healthy lunch. The simple ingredients make it an easy weeknight staple and you can grab everything you need at Walmart.  Considering that the salad gets yummier as it rests in the refrigerator, it is practically perfect for picnics and parties; you can make it ahead of time and serve later for rave reviews!

Creamy Cucumber Tomato Salad

This Creamy Cucumber Tomato Salad is packed with juicy ripe tomatoes, crisp cucumbers and fresh herbs and all topped off with a delicious creamy dressing.
Prep Time 15 minutes
Total Time 15 minutes
Servings 10 servings

Ingredients  

  • 3 large tomatoes
  • 1 English cucumber
  • ½ white onion sliced
  • fresh herbs for garnish parsley, basil and/or dill

Dressing

  • ¼ cup mayonnaise
  • 3 tablespoons sour cream
  • 1 teaspoon cider vinegar
  • ½ teaspoon sugar
  • ¼ teaspoon garlic powder
  • ½ tablespoon each fresh dill, fresh parsley and fresh basil
  • ¼ teaspoon each seasoned salt & pepper

Instructions 

  • Combine all dressing ingredients in a small bowl. Mix well.
  • Dice tomatoes and cucumbers into bite sized pieces.
  • Add vegetables and dressing into a medium sized bowl.
  • Toss well and season with salt & pepper to taste.
  • Serve immediately or refrigerate up to 3 days.

Notes

To take some of the "bite" out of the onion in this recipe, soak it in cold water while preparing the other ingredients.
Upon sitting, the salad will naturally produce liquid as cucumbers and tomatoes contain a lot of water. Drain before serving if needed.
Note: This recipe was originally published with Hidden Valley ® Simply Ranch Cucumber Basil Ranch as the dressing. This dressing is no longer available, regular ranch dressing can be substituted for the homemade dressing if desired.

  2. I usually make this with summer produce and it comes up in my FB memories so I remember. Imagine my sadness finding out they no longer make the cucumber basil ranch dressing! What’s wrong with them?! That stuff was AHHHHH-MAZINGGGGGGG

  5. They no longer have Hidden Valley ® Simply Ranch Cucumber Basil Ranch. So what would you replace it with instead? The Cucumber dressing?

    1. We have updated the recipe to include a homemade dressing. If you’d like to use bottled dressing, I would suggest either ranch or creamy cucumber.

    I’m not finding the Hidden Valley Cucumber Dill Ranch in stores anymore. Do you have any ideas for what would be a substitute? (Perhaps how to doctor original ranch to replicate the other version?) Thanks!

  7. Have had many cucumber tomato salads and I have to say this one tops the list. I used english cucumbers and for the herbs added dill, parsley and thyme with some freshly ground black pepper. Let the salad meld together in the refrigerator for a half hour a served with grilled chicken. A new favorite for us!5 stars

  9. Made this but used plain ranch and added fresh feta and diced fresh mozzarella cheese. My grandsons loved it 

  10. I wanted to try something different, so I made a salad like this last week, but no onions. I added flaked imitation crab. The crab was on sale, 8 oz. bags, 2 for $4 at kroger’s.
